Mom’s Stuffed Peppers by Brian Misko, House of Q

We teamed up with Pit Master Brian Misko from House of Q to provide you with delicious recipes you can make on your next RV adventure!

INGREDIENTS:

1 lb Beef, Pork or Mix
1 Cup Cooked Rice
1/2 Medium Onion, Finely Diced
1 Garlic Clove, Minced
1 Potato, Finely Grated
1 Egg
1 Tablespoon Tomato Paste
1/2 Teaspoon each of Salt, Pepper, Oregano, Paprika
2-3 Bell Peppers or 8 Mini Peppers

DIRECTIONS:

In a bowl, mix together the diced onion, garlic, shredded potato, egg, tomato paste and spices. Add the rice, stir to break up the rice and coat the grains. Add the meat and mix thoroughly.

Hollow out peppers and fill with equal portions of the meat filling. Grill indirectly or oven roast in a pan at medium heat for approximately 20-40 minutes (depends on the size of the peppers) or until the meat reaches 165 F.
